Live Lamb Butchery Demonstration & Meal
Join us in May for a unique evening celebrating whole-animal butchery and seasonal cooking in collaboration with Thurston Butchers.
Following the success of last year’s event, we’re delighted to bring you another hands-on and informative experience but this time with a focus on lamb. Whether you’re completely new to butchery or looking to deepen your understanding this promises to be an engaging and insightful evening.
Upon arrival you’ll be welcome with a complementary beer from Humber Doucy Brewing Co., then the event will begin with a full lamb butchery demonstration by Alastair of Thurston Butchers, taking you through the process from start to finish. You’ll see how a whole lamb is carefully broken down into its primal cuts with expert guidance on technique, tools and the characteristics of each section. Particular attention will be given to the saddle and chops, exploring their potential and why they are such prized cuts.
Throughout the demonstration, you’ll gain a deeper appreciation of how each part of the animal can be used, helping you make the most of quality meat in your own cooking.
After the butchery comes the best part, the eating. Roots Café Head Chef Danny Parker will serve a delicious three-course meal showcasing the lamb, with dishes thoughtfully created to highlight the cuts prepared during the demonstration.
There will be plenty of time to relax, ask questions, and enjoy the atmosphere, making this a sociable and memorable evening centered around great food, skill, and craft.

Terms and Conditions for attending this event
To ensure a safe and enjoyable time for all participants, we ask that all event attendees read and agree to abide by the following terms and conditions, in addition to our usual terms and conditions.
By purchasing a ticket, you and any ticket recipients agree to these terms.
- For health and safety reasons, we can only allow attendees who are 18 years or older to take part in this event.
- Should you require special dietary restrictions (e.g. gluten intolerances, dairy intolerances), these must be conveyed to us at least 3 days prior to the event.
- We reserve the right to refuse entry to any participant who is intoxicated or displaying anti-social behaviour, without a refund. Anyone who becomes intoxicated or exhibits anti-social behaviour during the event may be asked to leave and no refunds will be given.
- Safety instructions provided during the butchery demonstration must be followed at all times. We reserve the right to remove any participant not adhering to safety guidelines.
- Attendance is at your own risk. We accept no liability for personal injury, loss, or damage to personal property.
If you need to cancel your ticket
If you are unable to attend this event and notify us at least 7 full days in advance of the event date, we can offer a full refund for your ticket and make it available for someone else.
If cancellation is within 7 full days of the event date, unfortunately we are unable to offer a refund. We appreciate that sometimes unforeseen circumstances mean you can’t attend, in which case a friend may take your place. We will need their name, contact details and dietary requirements prior to the event.
Our right to cancel this event
All our events have a minimum attendance level and may be cancelled if too few bookings are received or for some other unforeseen circumstance. We reserve the right to cancel or postpone events at any time. Should we need to cancel an event, we will give you as much notice as possible of the cancellation. You will receive a full refund in this case. Unfortunately, we cannot accept any liability for travel or other costs.

Blackthorpe Barn is situated just south of Junction 45 of the A14, three miles east of Bury St Edmunds, in the village of Rougham.
Look out for the entrance gates to a long tree-lined avenue at the White House junction.
The Barn is down the avenue, on the right.

Ok, so we didn’t take the winning award home for Sustainable Strategy, but achieving finalist against some tough competition made us really proud.

Thatch update… week seven!
We’re another week in and the weather has been really kind so the thatchers team have been able to get on with the work - and even in shorts!
The famous Blackthorpe Barn is getting more and more golden as the time goes on and we love the bird’s eye perspective over Rougham Estate.
This is such a significant project which only needs doing every 30 – 35 years so if you want to visit to see the thatchers in action, we recommend you do so soon, as they are slowly coming to an end.
It’s also a great excuse to pop into Roots Café to try the new menu and also visit the @roughamestateshop RoughamEstateShop to see what new finds we have in stock!

Following our exciting new menu changes, today is International Waffle Day!
As part of our menu, we’re serving a special signature Roots Waffle; a vanilla and maple-coated waffle with white chocolate glaze, topped with kiwi, dragonfruit, strawberries and orange-infused Rougham Estate honey.
Delicious on its own or as a pudding.

If you’re planning a special trip to our award-winning Rougham Estate Shop soon, please note due to stock take we will be closed on the 31st March from 2–4pm.
We may need to continue until the next day (1st April), but only for the morning: 10am–12:30pm.
We will aim to be complete as soon as possible and will be back to normal as soon as we can.
There is still plenty to do on the Estate with walks and our popular Roots Cafe.

Introducing a new workshop to Rougham Estate!
The Canvas Club promises to bring a therapeutic painting session led by artist Sarah Day, alongside a glass of fizz and a tapas style menu.
Held on Friday 24th April, 7pm til 9:30pm, Roots Café will be open, out of hours, exclusively for this event.
The painting theme will be Cherry Blossom which is very appropriate for this time of year!
This is suitable for beginners or experienced creatives, so is perfect for an evening out with friends or family in a relaxed, social atmosphere while you paint, sip and graze.
